I'm having significant problems using any MIDI files in GCS.
It seems the instrument table isn't following General MIDI standard and so anything I throw at GCS just sounds terrible, be it rips from other games or custom MIDI files.
So I'm not even able to create MIDI files for this engine, because editors these days follow the General MIDI standard, making the whole process completely trial and error and finding the right instruments is a total pain.
Are there any tools or tips that will result in proper sounding music? I'm no expert on this subject, so maybe I'm making a simple mistake.
The manual suggests that conventional midi files won't work and that I should create my own, but those follow the same standard and won't work either.

The one thing I can recall is that in order to playback correctly, the files should be 8bit.

Have you tried alternative instrument tables? You can replace the ENGINE/GENMIDI.IBK file with other IBK files to make the MIDIs sound different. Here's some: www.midiox.com/jsoft.htm#IBKHere's an idea I haven't tried... you might be able to use the MT32 IBK and an MT-32 emulation environment in Dosbox or similar to possibly squeeze some amazing music out of the GCS. Worth a shot.

Is there any way to get pitch bends working in GCS? I don't recall there being any in the stock GCS midis.
